The Human Nutrition Program consists of foundational courses in human physiology and biochemistry which expand into in-depth learnings on macro and micronutrients, biochemical individuality, human development, functional assessment, and nutritional therapeutics. An integrative and holistic perspective is interwoven with an evidence-based approach to assessing and counseling a client.

Career Paths and Opportunities
UB’s Master of Science in Human Nutrition degree program will prepare you for many roles, including those in private nutritional consulting, health and exercise facilities, the supplement industry, schools and universities, centers for alternative and integrative medicine, and human nutrition research. Graduates may also work with independent certifying boards to obtain credentials as a Certified Nutrition Specialist or a Certified Clinical Nutritionist. They can also pursue doctoral studies in nutrition.

Oscar Coetzee, DCN
Dr. Oscar Coetzee received his master’s degree in Clinical Nutrition from the University of Bridgeport and then the Doctor of Clinical Nutrition Degree from Maryland University of Integrative Health. Dr. Coetzee is a Certified Board Supervisor for the CNS (Certified Nutrition Specialists) and is currently on the national board exam committee for the National Association of Nutritional Professionals (NANP). His specialties are Metabolic Syndrome, Intestinal Permeability, Weight Loss Resistance, Type II Diabetes, Sports Performance Enhancement and Irritable Bowel Syndrome.
Linda Fleming, MS, CNS
Linda Fleming has worked in the health care field and education in various capacities for over 20 years. She began her career as a medical technologist and ran a hospital chemistry laboratory for several years before shifting her emphasis to nutrition. Linda teaches several courses and assists in curriculum development, student support, and continued program assessment and improvement. She has been involved in writing several nutrition textbooks for Pearson Scientific, and is a member of the advisory board for CyberSoft, a developer of nutrition software.
Steven Lindner, DC, DACBN
Dr. Lindner is a Doctor of Chiropractic, Certified Nutrition Specialist and holds an MS in Clinical Nutrition. He focuses on optimizing human performance with nutrition, exercise and chiropractic with a neurological focus. Dr. Lindner is a member of the Nassau County Medical Reserve Corps and an active member of the New York Chiropractic Council. He is also on the advisory board for Annuals in Nutrition (McGraw Hill), as well as a peer reviewer for the Council on Chiropractic Practice National Guidelines that are published in the Library of Congress.
